Seasoned Potatoes
Description
This recipe uses halved or quartered potatoes tossed with olive oil and a distinctive mix of dry Italian dressing powder, garlic powder, kosher salt, and black pepper. The seasoning mix includes sweeteners and thickening agents that help form a pleasantly crisp coating on the potatoes during baking. The potatoes roast on a single layer in a prepared pan, stirred occasionally to promote even browning.
Cooking for 30-40 minutes at 400°F achieves potatoes tender inside with golden, slightly crunchy exteriors. Optional fresh herbs like parsley can be added for garnish to brighten the dish.
The dish serves as a versatile side suitable alongside various mains. Its flavorful crust and tender flesh make it appealing without complicated preparation. Using plenty of olive oil is central to achieving crispness and preventing sticking, as highlighted in the recipe notes.
Ingredients
- 24 ounce red potato halved or quartered into bite-size pieces, or baby Yukon gold potatoes
- 1 (0.7 ounce) Italian dressing mix I use Good Seasons brand, packet
- ¼ cup olive oil
- 1 teaspoon garlic powder
- ½ teaspoon kosher salt
- ¼ teaspoon black pepper ground
- parsley optional garnish, chopped fresh, or other herbs
Instructions
- Preheat the oven to 400°F. Line a rimmed baking sheet with parchment paper or aluminum foil and spray with cooking spray. Place the potatoes in a large bowl or zip-top plastic bag.
- In a small bowl, whisk together the dry Italian dressing mix, olive oil, garlic powder, salt, and pepper.
- Pour the oil mixture over the potatoes and gently toss to coat. Spread the potatoes in a single layer on the prepared baking sheet.
- Bake for 30-40 minutes, stirring with a spatula about every 10-15 minutes. The potatoes are done when they are crispy on the outside and tender on the inside. Garnish with chopped fresh herbs, if desired. Serve immediately.
Notes
- Generous olive oil is important to help crisp the potatoes and add flavor while preventing sticking.
- Use the dry Italian dressing mix packet as seasoning rather than preparing it as a salad dressing, since it contains components that aid in roasting texture.
