See's Bordeaux Pecan Fudge (Copycat)

See's Bordeaux Pecan Fudge replicates the classic treat with a smooth, creamy base combined with crunchy pecans for texture. The fudge balances sweetness from both brown and granulated sugars and a touch of vanilla, finished with a rich, buttery flavor. Cooling in the refrigerator solidifies the fudge, making it easy to slice and enjoy as a rich, nutty dessert or gift.

Description

This See's Bordeaux Pecan Fudge employs a blend of sugars, heavy cream, butter, and salt boiled to a specific temperature to achieve the right consistency. After cooking, powdered sugar is folded in and the mixture is beaten until it loses its shine, creating a creamy, dense fudge base. Chopped pecans are folded in to add texture. The mixture is then spread into a foil-lined pan and refrigerated for several hours to set. The final product features a smooth, rich mouthfeel with pecan pieces adding crunch throughout.

The fudge is cut into squares after chilling and is ideal as a nostalgic sweet treat, suitable for serving at gatherings, holidays, or for gifting. The dense texture and nutty flavor make it stand out as a classic pecan fudge option.

Achieving the correct sugar temperature during cooking is essential for texture, and beating the fudge after mixing in powdered sugar helps develop its creamy consistency. Using an even layer in the pan ensures uniform setting and ease of slicing after refrigeration.
