Sesame Cabbage Salad

Sesame Cabbage Salad combines shredded cabbage with toasted sesame seeds, sliced apple, Swiss cheese cubes, and juicy raisins for a crunchy, sweet-savory mix. The cabbage tossed in a mustard and vinegar dressing gives a tangy, slightly sharp base that is balanced by the fresh lemon juice on the apples preventing browning. This salad's texture contrasts between crisp cabbage, soft cheese, and chewy raisins, making it a refreshing side to many dishes or a light cold meal component.

Description

The Sesame Cabbage Salad blends a crisp shredded cabbage base with the sweet notes of apple slices and raisins, while cubes of Swiss cheese add creamy pockets throughout. The dressing made of yellow mustard, vinegar, olive oil, salt, and black pepper coats the vegetables lightly, lending a tangy and slightly mustardy flavor. Toasted sesame seeds enhance the taste with a nutty element and a subtle crunch. Lemon juice on the apples keeps them fresh and bright, maintaining their texture and color. The salad is served cold, making it a cooling accompaniment to richer main courses or a standalone light dish during warmer days.

The interplay of textures — crunch from cabbage, smoothness from cheese, and the burst of juiciness from apples and raisins — creates a lively mouthfeel. The salad can be prepped ahead, with flavors melding nicely if allowed time in the fridge. It's best kept refrigerated and consumed within a few days to maintain freshness.

Ingredients

Servings
  • 1 tablespoon yellow mustard
  • 1 tablespoon vinegar
  • 4 tablespoon olive oil
  • ¼ teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • ½ head cabbage shredded
  • 1 tablespoon lemon juice freshly squeezed
  • 1 apple cored and sliced
  • 4 ounce swiss cheese cubed
  • ¼ cup sesame seeds toasted
  • 3 ounce raisins

Instructions

  1. Make the Dressing: In a small bowl, mix together the mustard, vinegar, olive oil, salt and pepper. Whisk it until it's well incorporated.
  2. Shred Cabbage & Toss: Shred the cabbage using a mandoline or cut it as small as you can using a sharp knife, and place it in a large bowl. Pour the dressing over the cabbage and toss well.
  3. Prep apples: Pour the lemon juice over the apple so as not to get brown.
  4. Combine: Add the cheese, apple, raisins and sesame seeds to the cabbage and toss everything well together.
  5. Serve: Serve cold.
