Sesame Thai Chicken Dip
Description
Sesame Thai Chicken Dip brings together creamy softened cream cheese spread as a base with flavorful shredded chicken tossed in a mixture of soy sauce, sesame oil, and garlic. It layers sweetness and spice from Thai chili sauce combined with fresh, finely chopped spinach and chives that add a mild, herby note. Chopped peanuts or toasted sesame seeds sprinkled on top provide a crunchy contrast.
The dip offers a blend of creamy, savory, sweet, and fresh flavors, with textures ranging from smooth cheese to tender chicken and crisp greens. It is assembled by spreading the cream cheese on a platter then topping with the sauce, spinach, chicken, chives, and nuts.
This dip works well served right away or chilled for a few hours, accompanied by sesame rice crackers for scooping. Chilling slightly helps meld the flavors, but it is best eaten within a few hours to keep the spinach and peanuts from wilting and softening.
You can adjust the amount of spinach to taste or swap it for a sprinkle of cilantro, and many prefer specific brands of sweet Thai chili sauce for flavor consistency.
Ingredients
- 1 ½ tablespoons soy sauce I use low-sodium
- 1 tablespoon sesame oil toasted or regular
- 2 cloves garlic finely minced
- 2 to 3 to 3 cups cooked shredded chicken (rotisserie chicken works great)
- 16 ounces cream cheese softened to room temperature
- 1 cup thai chili sauce sweet
- 1 to 2 to 2 cups spinach fresh, finely chopped
- ½ cup chives or green onions, finely chopped
- ½ cup peanuts chopped, or toasted sesame seeds
- sesame rice crackers for serving
Instructions
- Whisk together the soy sauce, sesame oil and garlic. Toss with the shredded chicken. Set aside.
- Spread cream cheese evenly on 10- to 12-inch serving plate or platter. Top with sweet Thai chili sauce, spinach, chicken, chives or green onions, and peanuts or sesame seeds.
- Serve right away or refrigerate 2-4 hours (any longer and the peanuts can soften and the spinach can get a bit wilty). Serve with rice crackers.
Notes
- You can increase or reduce the spinach amount depending on your preference; substituting with fresh chopped cilantro is also an option.
- For a consistent flavor, consider using popular brands like Mae Ploy or Thai Kitchen for the sweet Thai chili sauce.
- Leftovers can be refrigerated for a few hours, but spinach and peanuts may soften over time, so it’s best served within a couple of hours.
