Shaved Brussels Sprout Salad

This Shaved Brussels Sprout Salad combines thinly sliced sprouts with crisp apple chunks, dried cranberries, toasted seeds, Parmesan cheese, and fresh chives. Tossed in a lemon-Dijon vinaigrette, it offers a balance of bright acidity, sweetness, and savory notes. The salad’s crunchy texture and fresh flavors make it a refreshing, light dish or side salad, especially appealing during seasons when Brussels sprouts are abundant.

Description

The salad focuses on very thinly shaved Brussels sprouts to create a tender yet crunchy base. Adding chopped apple gives a crisp freshness that contrasts with the earthiness of the sprouts. Dried cranberries provide a sweet tartness, while toasted sunflower seeds add crunch. Parmesan introduces a salty, savory element, and chives bring a mild onion flavor.

The dressing combines extra virgin olive oil, fresh lemon juice, Dijon mustard, salt, and black pepper to dress the salad with a bright, tangy finish that complements the natural flavors. Tossing the dressing just before serving keeps the vegetables crisp.

This salad pairs well with grilled meats or as a light first course. It benefits from immediate serving after dressing to maintain its texture. Shaving Brussels sprouts can be done with a knife, mandolin, or food processor, allowing flexibility based on available tools.
