Shaved Brussels Sprouts Salad

This Shaved Brussels Sprouts Salad is filled with sweet juicy raspberries, tangy parmesan cheese and drizzled with homemade maple Dijon vinaigrette, creating the most amazingly vibrant and delicious combination of flavors and textures.

For the Salad

  • 1 ½ pounds Brussels sprouts
  • cup raspberries fresh
  • ½ cup Parmesan Cheese flaked, fresh
  • cup almonds toasted, slivered

For the Dressing

  • cup olive oil
  • 3 tablespoons apple cider vinegar
  • 1 ½ tablespoons maple syrup sugar-free
  • 2 teaspoons Dijon mustard
  • ½ teaspoon thyme dried
  • 1 clove garlic grated
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper ground

Instructions

  1. Add all the dressing ingredients into the bowl of a mini chopper, immersion blender or food processor.
  2. Blend until well combined and emulsified, then set aside while you assemble the salad.
  3. Wash, dry and remove the outer leaves of your Brussels sprouts. Then shave them as thin as you can get them. The best way to achieve this is using a mandolin slicer. If you don’t have a mandolin, you can use a sharp knife or food processor with the slicing blade. I cannot stress enough that you want them shaved, not just shredded.
  4. Add the Brussels sprouts to a large bowl.
  5. Take a wedge of parmesan cheese and using a sharp knife, flake off random shards. Add them to a bowl along with the raspberries and toasted slivered almonds.
  6. Pour the dressing over the top and toss to combine. Allow the salad to sit for at least 20 minutes before serving.
  7. Store leftovers in an airtight container for a few days in the fridge.
