Sheet Pan Chicken Puttanesca

An easy chicken sheet pan dinner with all the flavors of pasta puttanesca.

Ingredients

  • 4 boneless skin on, chicken breasts (or thighs)
  • salt fresh cracked
  • black pepper fresh cracked
  • 2 Tbsp olive oil
  • 1 shallot peeled and thinly sliced
  • 1 cup black olives or mixed olives
  • 1/2 cup artichoke hearts halved or quartered, roasted marinated
  • 8 garlic roasted cloves
  • 1/2 cup red peppers sliced into strips, marinated roasted
  • 1/3 cup tomatoes in oil, sun dried
  • 1 Tbsp capers
  • 6 anchovy filets
  • tomato or about 2 cups loose, small, on the vine, a few stems
  • 1/2 lemon cut in small wedges
  • 1/4 cup pine nuts
  • red chili flakes a pinch to 1 tsp, to taste

Instructions

  1. Preheat the oven to 350F
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Heat the olive oil in a nonstick skillet and brown the chicken, skin side down, for about 5 minutes, or until nice and brown. Transfer to a baking sheet.
  4. Arrange the rest of the ingredients around the chicken. Give the lemon wedges a squeeze as you add them. Season with fresh cracked black pepper.
  5. Bake for about 30 minutes, or just until the chicken is cooked through and the tomatoes have begun to break down. The interior of the chicken should register 160F on an instant read thermometer.
  6. Scoop onto plates and enjoy!

Notes

  • Feel free to add some of the brine from the olives, etc, and the oil from the sun dried tomatoes to the pan, it will create a wonderful sauce as it cooks with the chicken.
