Sheet Pan Egg-in-a-Hole with Bacon

Ingredients
- 8 Bacon sliced
- 4 bread slices, ½-inch thick
- 1 tbsp butter
- 4 egg
- salt sea salt and freshly cracked, to taste
- black pepper sea salt and freshly cracked, to taste
- chives fresh, chopped
Instructions
- Preheat the oven to 400 degrees.
- Place the bacon on a sheet pan in a single layer. Place into the oven and bake until par-cooked, about 6-7 minutes. Transfer bacon to some paper towels. Side Note: You can also par-cook the bacon in a skillet over medium heat if you prefer.
- Coat the baking sheet with cooking spray if needed.
- Butter one side of each slice of bread, then using a 3-inch biscuit cutter, make a hole in the center of each bread slice. Place the bread butter side down on the baking sheet along with the buttered circles.
- Add two bacon slices to each slice of bread then gently crack an egg into each hole.
- Place into the oven and bake until the egg whites have set, about 10-12 minutes, turning the sheet pan halfway through baking.
- Remove from the oven and top with freshly chopped chives then season with sea salt and freshly cracked pepper, to taste. Serve immediately! Enjoy.
