Sheet Pan Pancakes
Description
The batter is made by whisking together dry ingredients—flour, baking powder, sugar, and salt—and combining them with milk, eggs, and melted butter. The mixture is spread evenly on a greased 13 x 18-inch baking sheet. Fresh sliced strawberries and whole blueberries are distributed on top before baking at 425°F for 15 minutes.
The high oven temperature produces a golden crust on the pancakes while keeping the interior tender and moist. The fruit on top softens and releases sweetness through the batter, adding bursts of flavor and color. This sheet pan method simplifies preparation by avoiding individual pancakes and is suitable for serving several people at once.
