Sheet Pan Pancakes

Sheet Pan Pancakes provide a convenient twist on traditional pancakes by baking batter spread over a large pan, resulting in a soft, tender texture with evenly cooked golden edges. The batter combines all-purpose flour, sugar, baking powder, baking soda, buttermilk, eggs, melted butter, and vanilla, with optional mix-ins folded in before baking.

Description

The method calls for combining dry ingredients to create the base followed by wet ingredients including eggs, buttermilk, vanilla, and melted butter. Gently folding the wet and dry mixtures prevents overmixing, preserving a tender final crumb. After pouring the batter into a greased half sheet pan and adding any desired mix-ins, the batter bakes at 400°F until the surface springs back when touched, ensuring doneness.

This approach yields a pancake sheet that can be sliced into portions, simplifying serving and cleanup, especially for feeding groups. The texture remains light and fluffy with slightly crisp edges typical of baked pancakes. Serving straight from the oven with toppings like syrup, fruit, or whipped cream offers a practical breakfast or brunch option.
