Sheet Pan Sausage and Veggies

Sheet Pan Sausage and Veggies is a straightforward roasted dish combining smoked kielbasa with butternut squash, bell peppers, zucchini, and red onion. Seasoned with olive oil, thyme, smoked paprika, garlic salt, and black pepper, the vegetables roast to a browned, tender state while the sausage adds smoky flavor. This one-pan meal balances sweet, savory, and smoky notes with minimal prep and cleanup.

Description

This recipe calls for diced butternut squash steamed briefly to partially cook it before combining with chopped bell peppers, zucchini, red onion, and sliced smoked kielbasa sausages. Tossing the ingredients with olive oil and spices like thyme and smoked paprika evenly coats everything for roasting. Spreading the mixture on a baking sheet allows the vegetables to roast and caramelize at 400°F while the sausage crisps on the edges.

The resulting dish offers tender squash and veggies with slightly crisped surfaces, complemented by smoky, savory sausage slices. The smoky paprika and garlic salt deepen the flavor profile.

Served as a quick weeknight dinner or lunch, this sheet pan meal requires minimal hands-on time and cleanup. Leftovers can be reheated and enjoyed for easy subsequent meals.

Ingredients

Servings
  • 14 ounces smoked kielbasa sausage
  • 1 cup butternut squash diced
  • bell pepper yellow, red or orange, diced
  • 1 zucchini cut into half moons, small
  • red onion cut into thick slices
  • 2 tablespoons olive oil
  • ½ teaspoon thyme dried
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic salt
  • ¼ teaspoon black pepper ground

Instructions

  1. Preheat oven to 400°F.
  2. Add the butternut squash to a microwave safe bowl and steam in the microwave for 2 minutes while you chop the other veggies. You don’t want it cooked through, just about halfway cooked.
  3. Add all the remaining veggies and sausage to a large mixing bowl.
  4. Drizzle the olive oil over the top. Sprinkle in the thyme, smoked paprika, garlic salt and pepper.
  5. Toss to combine, making sure each piece is well coated with the oil and spices.
  6. While it’s not necessary to line the baking sheet with parchment paper or aluminum foil, you certainly can if you’d like.
  7. Pour onto a baking sheet that’s been brushed with olive oil.
  8. Bake for 25 minutes or until the veggies are cooked through and are slightly brown.
