Sheet Pan Shrimp Fajitas

Sheet Pan Shrimp Fajitas combine seasoned shrimp with bell peppers and onions cooked together on a single pan. The roasted vegetables provide sweetness and softness, while the spiced shrimp offer a flavorful, tender protein. This one-pan method streamlines cooking and cleanup, making it practical for a quick weeknight meal.

Description

The recipe features peeled and deveined shrimp tossed in olive oil with chili powder, cumin, onion powder, and salt, baked alongside sliced bell peppers and onions that are seasoned and roasted first. The bell peppers and onions develop a tender texture with slightly caramelized edges after roasting at 425°F. Adding the shrimp to the same pan after the veggies cook ensures they remain juicy and cook evenly without becoming rubbery.

The dish is assembled in warm corn tortillas and topped with avocado, cilantro, sour cream, and salsa to add freshness, creaminess, and acidity. This provides a balanced texture combination from the crisp-tender vegetables, succulent shrimp, and soft tortillas.

Serving the shrimp and veggies together allows for a flavorful, straightforward fajita experience with minimal effort and cleanup. The method emphasizes spice layering and roasting to intensify natural flavors.
