Description
This recipe starts by buttering rye bread slices and spreading homemade Russian dressing on the unbuttered sides. The layers of sliced turkey, drained sauerkraut, and Swiss cheese build robust flavor and texture. Baking the sandwiches on a sheet pan at 400°F crisps the bread and melts the cheese evenly without additional assembly steps. Alternatively, a griddle or skillet can be used to grill the sandwiches batch by batch.
The homemade Russian dressing combines mayonnaise, ketchup, sweet relish, yellow mustard, and prepared horseradish, whisked together and chilled before use, lending a creamy, tangy, and slightly spicy note that complements the classic Reuben ingredients. The sandwiches are best served promptly while warm, with dill pickles and chips as traditional sides.
Ingredients
- 8 lices rye bread use any style you like
- butter
- Russian dressing recipe below
- 1 lb turkey sliced
- 1 cup sauerkraut drained
- 8 lices swiss cheese
homemade Russian dressing
- 1/2 cup mayonnaise
- 5-6 Tbsp ketchup I used my favorite jalapeño ketchup, Heinz makes it
- 3 tsp sweet relish
- 1 tsp yellow mustard
- 1-2 tsp prepared horseradish or to taste
- pinch salt to taste
Instructions
- Preheat oven to 400F
- Butter one side of each slice of bread. Flip the slices over so the un-buttered side is up.
- Spread Russian dressing on the unbuttered sides of the bread.
- Add turkey slices to four of the eight pieces of bread.
- Top the turkey with the sauerkraut.
- Then add the cheese.
- Top your sandwiches with the remaining pieces of bread.
- If using the sheet pan, arrange the sandwiches on an unlined pan and bake for about 10-15 minutes, or until the bread is golden. If you like you can flip the sandwich to crisp up the other side a bit more.
- Slice and serve asap with a side of dill pickles and chips.

- Whisk the ingredients together and adjust anything to your particular taste. Keep chilled until ready to use, you can make it up to 2 days in advance.
