Shepherd's Pie

Ground beef and vegetables are covered with a layer of creamy mashed potatoes and baked. A savory gravy and melted shredded cheese make this shepherd's pie a family favorite.

Ingredients

  • 1 tbs vegetable oil or olive oil
  • 1 1/2 lbs ground beef
  • 1 onion medium, chopped
  • 1 clove garlic
  • 1 tsp seasoning salt
  • 1/4 tsp black pepper
  • 3 tbsp flour
  • 1 1/2 cups beef broth
  • 1 cup mixed vegetables I used peas, carrots and corn, frozen
  • 5 potato large
  • 2 tbsp butter salted
  • 1/2 cup milk
  • 1 cup cheddar cheese grated
  • green onion optional, or chives, chopped, for garnish

Instructions

For the meat and vegetables

  1. Place oil in a large pot or dutch oven. Add ground beef, onions, and garlic. Cook at medium heat until beef is lightly browned.
  2. Add seasoning salt, pepper, and flour. Mix until well combined. Gradually add beef broth and cook until thickened (approximately 5 minutes). Stir in vegetable mixture. Cover with lid and simmer for 20 minutes over low heat.
  3. For the mashed potatoes
  4. While the meat and vegetable mixture simmer, peel and cut potatoes into evenly sized pieces (about 8 pieces per potato). Bring a large pot of water to boil and add the potatoes. Cook potatoes for approximately 20 minutes or until a knife can be easily inserted. Do not overcook or they will become watery.
  5. When potatoes are cooked, add butter and mash. Then stir in milk.

Assemble and Bake

  1. When meat mixture is thickened and cooked through, transfer to an 9 x 13 or oval baking dish. Cover meat and vegetable mixture evenly with mashed potatoes. Top with shredded cheese..
  2. Place in the oven and bake uncovered at 400 degrees for 20 minutes or until golden brown. Garnish with chopped green onions or chives before serving, if desired.

Notes

  • Recipe Note: Can be made with or without shredded cheese. If leaving off cheese, brush the top of the potatoes with a beaten egg to help them brown.
