Description
The marinade blends soy sauce, lemon juice, olive oil, Worcestershire sauce, garlic, Italian seasoning, black pepper, salt, and onion powder to impart robust flavor to lean steak chunks. Marinating for at least one hour (up to 24) enhances meat tenderness and depth of taste. Meat and veggies are cut into uniform 1-inch pieces for even cooking.
After seasoning the onions and peppers, pieces are threaded alternating onto skewers with the marinated steak. Grilling on medium-high heat for 4-5 minutes per side chars and cooks the kabobs evenly while preserving juiciness. The addition of chopped parsley after grilling adds freshness.
Bamboo skewers require soaking before use to prevent burning; metal skewers can be used as a sturdy alternative. The dish serves as a colorful and texturally varied main course, suitable for outdoor or indoor grilling.
Marinating longer increases flavor penetration. Broiling kabobs in the oven is an alternative cooking method if a grill is unavailable.
Ingredients
For the marinade
- 1/3 cup soy sauce
- 1/4 cup lemon juice
- 1/2 cup olive oil
- 1/4 cup Worcestershire sauce
- 2 teaspoons garlic minced
- 1 tablespoon Italian seasoning
- 1 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon onion powder
For the kabobs
- 2 pounds steak such as sirloin or New York strip, cut into 1 inch pieces, lean
- 1 large red onion cut into 1 inch pieces
- 1 red bell pepper cut into 1 inch pieces
- 1 green bell pepper cut into 1 inch pieces
- 1 tablespoon parsley chopped
Instructions
- Place all the marinade ingredients in a bowl or in a resealable gallon sized freezer bag. Mix to combine.
- Add steak pieces to the marinade. Marinate for at least 1 hour, or up to 24 hours.
- Season the onions and peppers with salt and pepper to taste.
- Thread the beef, peppers and onions onto skewers.
- Heat a grill or indoor grill pan to medium high heat.
- Place the kabobs onto the grill and cook for 4-5 minutes per side. Sprinkle with parsley, then serve.
- Broiler directions: Prepare the skewers as directed and place on a sheet pan coated with cooking spray. Broil for 4-5 minutes per side. Continue with the recipe as directed.
Notes
- Use metal skewers for sturdiness or soak bamboo skewers in water for 30 minutes to prevent burning.
- Cut vegetables the same size as meat pieces to ensure even grilling and contact with heat.
- Longer marinating times, up to 24 hours, deepen the flavor in the steak.
