Description

This Shrimp and Sausage Gumbo begins with making a roux by cooking oil and flour until creamy brown, which thickens and flavors the stew. Chicken broth forms the base, into which shrimp, sliced andouille sausage, and a trinity of vegetables (celery, onion, red bell pepper) are added along with tomato paste, garlic, canned diced tomatoes, and a custom gumbo seasoning blend featuring paprika, Italian seasonings, garlic powder, cayenne, and red pepper flakes. Hot sauce is included to taste, enhancing the spicy character.

The gumbo cooks covered until shrimp turn opaque and vegetables are tender, developing a hearty, slightly smoky profile. Optional frozen okra and cooked long grain rice may be stirred in, adding thickness and heartiness.   • cup neutral cooking oil generic cooking oil
  • ¼ cup flour
  • 4 cups chicken broth or vegetable broth
  • 1-2 pounds Shrimp peeled and de-veined, tails removed, medium or large size
  • 1 pound andouille sausage sliced
  • 3 talks celery chopped
  • 1 medium white onion diced, or yellow onion
  • 1 red bell pepper diced
  • 1 ounce tomato paste canned
  • 3 teaspoons garlic minced
  • 1 ounce diced tomatoes including liquid, canned
  • gumbo seasoning see below
  • 2-4 teaspoons hot sauce preferably Cholula

Gumbo Seasoning

  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning or sub equal parts dried oregano, dried thyme, and dried basil, dried blend
  • 1 teaspoon garlic powder
  • ½ teaspoon cayenne pepper
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes less for milder heat, crushed
  • 1 cup long grain rice optional, cooked
  • ½ pound okra optional, frozen

Instructions

  1. Stir together all Gumbo Seasoning ingredients and set aside. In a large pot over medium-high heat, add oil. Stir in flour and continue to stir with a whisk until mixture is browned and creamy. 
  2. Add broth, shrimp, sausage, celery, red bell peppers, onions, tomato paste, garlic, diced tomatoes, Gumbo Seasoning, and hot sauce and stir to combine everything. 
  3. Cover and cook for 10-15 minutes. Gumbo should be boiling, veggies should be tender, and shrimp should be opaque. Taste and add salt, pepper, and hot sauce if desired. Garnish with chopped parsley or fresh thyme and serve. 

Notes

  • Add frozen okra and cooked rice to the gumbo for a more traditional texture and heartiness.
  • Adjust the heat level by varying the amount of hot sauce and cayenne pepper in the seasoning blend.
  • Garnish with fresh parsley or thyme before serving for additional color and aroma.
