Marinade:

  • scallop as many as you want, fresh
  • Shrimp deveined, with tail on (as many as you want, fresh large
  • lemon zest of one
  • 1 clove garlic minced
  • 1 tbsp olive oil
  • 3-4 basil chopped (divided, leaves

Other Ingredients:

  • 1 tsp olive oil
  • 3 tbsp butter
  • lemon juice of one
  • sea salt to taste, fresh cracked pepper
  • black pepper to taste, fresh cracked pepper

Instructions

  1. Combine the first five ingredients plus a bit of chopped basil and marinate in the refrigerator for 1 hour.
  2. Remove from the marinade, pat them dry with a paper towel, then season the scallops and shrimp with salt and pepper.
  3. Heat the last teaspoon of olive oil and butter in a large skillet over medium-high heat. When the skillet is hot add the scallops and cook for about 1-2 minutes then flip them over.
  4. Add the shrimp and lemon juice to the pan and cook for about 1-2 minutes or until the shrimp is pink and tender and the scallops are golden brown.
  5. Serve immediately and enjoy.
