Shrimp & Artichoke Whole Wheat Pasta Salad Recipe

Whip up this pasta salad for a healthy make-ahead meal or to bring to a potluck. Whole wheat pasta, perfectly seared shrimp and artichokes make a fantastic combination!

Ingredients

Servings

The Dressing:

  • 3 tablespoons lemon juice fresh
  • 1 teaspoon agave nectar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper ground
  • ¼ cup extra-virgin olive oil

The pasta salad::

  • 12 ounces whole wheat orzo pasta
  • 1 teaspoon olive oil
  • 1 pound Shrimp peeled & deveined, large
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper ground
  • 1 artichoke hearts 14 ounce can, drained & quartered
  • cup sun-dried tomatoes not packed in oil, sliced
  • 5 basil thinly sliced, large leaves

Instructions

The Dressing:

  1. In a medium bowl, whisk together the lemon juice, agave nectar, salt and pepper. While whisking, gradually pour in the olive oil until combined.

The Pasta Salad:

  1. Cook the orzo according to the package directions. Drain and rinse with cold water.
  2. Season the shrimp with salt and pepper. Heat the olive oil in a large skillet set over medium-high heat.
  3. Add the shrimp and sear until the shrimp are just cooked through, about 90 seconds per side.
  4. In a large bowl, combine the orzo, shrimp, artichokes, sun-dried tomatoes and basil.
  5. Pour the dressing into the salad and toss to combine. Serve.
