Shrimp Boil

The Shrimp Boil combines baby potatoes, corn on the cob, smoked sausage, and fresh shrimp boiled with Old Bay seasoning for a classic seafood boil. The shrimp are cooked just until pink and tender, then tossed in a rich Cajun butter made with seasoned melted butter. This creates a tasty mingle of flavors with smoky, spicy, and buttery notes. Garnishing with parsley adds freshness. The method keeps the shrimp juicy and avoids overcooking, making it ideal when you want a convivial seafood meal with simple preparation.

Description

This Shrimp Boil recipe involves boiling potatoes and corn until tender in a broth seasoned with Old Bay, a traditional seasoning blend that delivers savory and slightly spicy flavors. After that, fresh—preferably thawed and not precooked—shrimp and smoked sausage are briefly boiled to retain shrimp tenderness and sausage smokiness. The shrimp cook very quickly, about one minute, avoiding the rubbery texture overcooking brings.

The cooked ingredients are then combined with a melted butter sauce flavored with Cajun seasoning, which lends a creamy, spicy coating to the components. This blend enriches the dish with buttery and robust Cajun flavors. The finished boil is garnished with chopped parsley for herbal brightness and served hot.

This dish works well as a shared casual meal, where diners enjoy the mingled sweet corn, tender potatoes, smoky sausage, and tender shrimp all coated in the seasoned butter. It is practical to prepare in a large pot and finish with a skillet sauce for rich flavor and easy serving.

For best results, use fresh shrimp whenever possible and avoid precooked shrimp to maintain texture. Extra Cajun butter can be made and served alongside for dipping or drizzling to add more sauce if desired.

Ingredients

Servings
  • water for boiling
  • 4 tablespoons Old Bay seasoning
  • 8 oz. (230g) baby potato cut into halves
  • 2 ears corn cut into 2-inch (5cm) pieces, on the cob
  • 12 oz. (350g) smoked sausage cut into pieces (Hillshire Smoke Sausage Rope)
  • 1 lb. (500g) Shrimp shelled, deveined, tail-in
  • 1 tablespoon parsley for garnishing, chopped

Cajun Butter

  • 6 tablespoons butter melted, unsalted
  • 1 1/2 tablespoons Cajun seasoning McCormick

Instructions

  1. Fill a large stockpot halfway with water. Bring the water to a rolling boil over high heat. Add the Old Bay seasoning, followed by the potatoes and corn. Cover the pot and boil for 8 to 10 minutes, or until the potatoes are tender.
  2. In the meantime, prepare the Cajun butter by combining melted butter with Cajun seasoning. Stir well to mix and set aside.
  3. In the stockpot, add the shrimp and smoked sausage, and boil for one minute, or until the shrimp turns orange-pink. Remove the pot from heat and carefully drain all the ingredients using a colander. You may need to do this in two batches if your colander isn’t large enough.
  4. Heat a skillet over high heat. Add the Cajun butter sauce to the boiled ingredients and stir to combine well. Transfer the shrimp boil to a sheet pan or serving platter, garnish with chopped parsley, and serve immediately.

Notes

  • Use fresh shrimp for better flavor and avoid precooked shrimp to maintain tenderness.
  • Thaw frozen shrimp thoroughly before cooking to prevent watery texture.
  • Cook medium-sized shrimp about one minute to avoid rubbery meat.
  • Adding extra Cajun butter sauce is optional and can be served on the side for dipping.
  • Zatarain’s seasoning may be too salty; Old Bay is preferable for this recipe.
