Shrimp Cakes
Description
The Shrimp Cakes recipe features raw shrimp processed in a food processor to a coarse texture rather than a paste, preserving bits of shrimp bite in each patty. Mixed with panko breadcrumbs and finely diced red bell pepper, the cakes are bound with eggs and accented with chives and lemon zest to add herbal and citrus brightness. Cooking the patties in olive oil over medium-high heat creates a crispy golden crust while keeping the interior tender and flavorful. The cakes are best served right away for optimal texture and garnished with additional chives, sour cream if desired, and lemon wedges to enhance their fresh taste. This makes for a versatile appetizer or main that showcases shrimp in a different format.
The gentle folding of ingredients ensures the patties hold together without becoming too dense or pasty. The recipe is straightforward and practical for home cooks seeking a seafood dish with distinctive texture and fresh seasoning. The balance of flavors depends on the natural sweetness of shrimp, complemented by mild bell pepper and chives.
Ingredients
- 1 pound Shrimp peeled and deveined, raw
- ¾ cup panko breadcrumbs
- ¼ cup red bell pepper finely diced
- 3 tablespoons chives sliced, plus more for garnish
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 2 egg
- 1 teaspoon lemon zest
- 4 tablespoons olive oil
Instructions
- Place the shrimp in the bowl of a food processor. Pulse until coarsely chopped - do not grind into a paste.
- Transfer the shrimp to a large bowl and add the panko breadcrumbs, red bell pepper, chives, salt, pepper, eggs, and lemon zest. Stir gently to combine.
- Form the shrimp mixture into 6 patties.
- Heat the olive oil in a large pan over medium high heat. Add the shrimp patties in a single layer and cook for 4-5 minutes on each side or until golden brown.
- Serve immediately, topped with additional chives and sour cream if desired. Garnish with lemon wedges if desired.
Notes
- Use fresh chives to enhance the herbal brightness in the cakes and as garnish.
- Sour cream can be served on the side for a creamy contrast, adding richness to the dish.
- Cook shrimp cakes just until golden on each side to maintain a moist interior and crispy exterior.
