Shrimp Ceviche

Description

This Shrimp Ceviche uses chopped, fresh shrimp that are marinated in freshly squeezed lime juice along with red onion and kosher salt.   • 1 pound Shrimp chopped (preferably wild, fresh, peeled and deveined
  • 1 cup lime from 6 to 9 limes, fresh squeezed juice
  • 1/4 cup onion red, chopped
  • 1 1/2 teaspoons kosher salt
  • 2/3 cup cucumber peeled and diced
  • 1 to 2 jalapeño (stemmed and sliced into rings)
  • 1/4 cup cilantro chopped
  • 1 scallions (chopped)
  • tortilla chip for serving, or plantain chips

Instructions

  1. In a large bowl combine the shrimp, lime juice, red onion and salt.
  2. Let it sit for 20 minutes, stirring occasionally until opaque.
  3. Add the cucumbers, jalapeño, cilantro and scallion.
  4. Serve right away with chips.
