Shrimp Ceviche
Description
This Shrimp Ceviche uses chopped, fresh shrimp that are marinated in freshly squeezed lime juice along with red onion and kosher salt. The acidity of the lime juice denatures the proteins in the shrimp, firming and 'cooking' them without heat. After about 20 minutes, the shrimp turn opaque and achieve a tender but firm texture. Adding diced cucumber, sliced jalapeño, chopped cilantro, and scallions imparts a variety of fresh flavors and textures, including coolness from the cucumber and mild heat from the jalapeño.
The dish is served immediately, garnished with chips which lend a crunchy contrast to the marinated shrimp. This preparation highlights the brightness of citrus and fresh herbs combined with the sweetness of shrimp.
