  • 12 ounces Shrimp peeled, deveined, tail removed, cooked
  • ½ cup lime juice fresh
  • 2 Roma tomato diced
  • 1 medium red onion diced
  • 2 medium jalapeno pepper seeded and diced
  • ¼ cup cilantro chopped
  • 2 green onion diced
  • ¼ teaspoon kosher salt

Instructions

  1. Chop the shrimp. Place in a medium bowl.
  2. Add lime juice. Toss to coat the shrimp in the lime juice. Let rest for 10 minutes.
  3. Add tomatoes, onion, jalapenos, cilantro, green onions, and salt. Cover and chill for 30 minutes to an hour.
