Shrimp Ceviche (Ceviche de Camarón)

Shrimp ceviche is soaked in lime juice and served with herbs, tomatoes, jalapenos, and onions. It’s bright, refreshing, and easy to make!

Ingredients

Servings
  • 1 1/2 lbs Shrimp shells and tail removed, cleaned, large raw
  • 9 lime 1 cup + 1 tablespoon juice
  • 1/2 small white onion finely diced
  • 1/2 small red onion finely diced
  • 2 jalapeños seeded and diced (or Serrano for more heat)
  • 2 Roma plum tomato seeded and diced
  • 1/2 cup cilantro chopped

Optional Add-ins

  • 1/2 cup corn kernels
  • 2 avocado seeded and diced

Serving

  • tortilla chips
  • tostada shells

Instructions

For Cooked Shrimp

  1. Either use already cooked and go to Step 3 below or cook raw as follows. In large soup pot, bring 6 cups of water to a rolling boil over medium high heat. Add 2 tablespoons of salt, juice from 1 lime and the raw shrimp. Cook 1 minute then remove immediately, drain through a colander and run cold water over shrimp to stop the cooking. Drain and set aside to cool.
  2. To a medium bowl, add the onions and 1 cup of fresh lime juice and let rest 5 minutes.
  3. Add the shrimp, jalapeño, tomato and cilantro to the onions in bowl. Toss to mix thoroughly. Season with salt and pepper. Serve immediately or cover and chill before serving with tortilla chips or drained on tostada shells.

For Raw Ceviche

  1. Slice the shrimp from head to tail down the middle or cut horizontally into small pieces.
  2. To a medium bowl, add the raw shrimp and 1 cup of fresh lime juice. Cover the bowl with plastic wrap and let it rest 25 minutes. Stir in diced onions and let it rest another 5 minutes.
  3. Add the jalapeño, tomato and cilantro to the shrimp and onions in bowl. Toss to mix thoroughly. Season with salt and pepper. Serve immediately or cover and chill before serving with tortilla chips or drained on tostada shells.

Notes

  • Optionally, add corn and diced avocado to the mixture just before serving. Nutritional information shown does not include optional ingredients or chips.
