Shrimp Cocktail
Description
This Shrimp Cocktail recipe involves simmering aromatics including lemon wedges, sliced onion, bruised garlic cloves, tarragon, whole black peppercorns, and a bay leaf in water to infuse the poaching liquid. Peeled and deveined shrimp are briefly cooked in this simmering broth for about two minutes until they turn bright pink and firm.
Immediately transferring the shrimp to an ice water bath stops the cooking process and preserves their tender texture. The chilled shrimp are then paired with cocktail sauce and remaining lemon wedges for serving.
The method ensures the shrimp have a fresh, lightly seasoned flavor and firm bite, ideal for serving as a cold appetizer at gatherings or as a light snack.
