Easy recipe for Shrimp Cocktail with Dragon Fruit. Elevate this much loved retro holiday appetizer with a unique, healthy and tropical twist of textures and flavours.

Ingredients
- 400 g (14oz/ 4 cups) Shrimp cut into pieces if large, pre-cooked, fresh or defrosted; prawns
- 2 large dragon fruit finely chopped (see notes)
- 1 avocado finely chopped
- 1 apple Granny smith or other tart apple
- 2 pink shallot finely chopped
- 1 quantity mayonnaise see recipe below, wasabi
- ¼ teaspoon Tabasco sauce green
- 1 lime juice only
- 2 tablespoon Coriander finely chopped (or parsley/chives, fresh leaves
- 1 tablespoon mint leaf finely chopped, fresh
Instructions
- First make the wasabi mayonnaise - see recipe below.
- Cut up all the ingredients into small pieces and add to a big bowl. Stir in the wasabi mayonnaise and lime juice. Add a few drops of tabasco (or more wasabi) according to your taste then stir in the chopped fresh coriander and mint.
Notes
- To Serve: Chill until ready and serve in individual glasses or directly in the dragon fruit.
- To Prepare: This can be prepared the day before and chilled covered in the fridge until needed. However, this is not recommended to freeze.
- Dragon Fruit: Either red or yellow are great. If not available, replace with kiwi fruit.
