Ingredients
The Salad:
- 1 avocado large, California
- 1 whole wheat pasta small shell shape, cooked and rinsed with cold water, 13 oz box
- ½ lb. Shrimp without shells or tails, large, grilled
- 2 corn kernels cut off & cobs discarded, grilled cobs
- 1 cup grape tomato cut in half, or cherry tomato
The Dressing:
- 1 cup basil leaves fresh, packed
- 5 tablespoons extra-virgin olive oil
- 2 tablespoons shallot minced
- 2 tablespoons Greek yogurt nonfat plain
- ½ teaspoon kosher salt
- ½ teaspoon black pepper ground

Instructions
The Salad:
- Cut half of the avocado into chunks and the other half into thin slices.
- In a large bowl, combine the avocado chunks, cooked pasta, shrimp, corn kernels and tomatoes.
The Dressing:
- In the bowl of a food processor, combine the basil leaves, olive oil, shallots, Greek yogurt, salt and pepper. Puree until almost smooth.
- Pour the dressing over the salad and toss gently to combine. Season with salt and pepper, to taste.
- Lay the avocado slices on top of the pasta salad. Serve.
