The Salad:

  • 1 avocado large, California
  • 1 whole wheat pasta small shell shape, cooked and rinsed with cold water, 13 oz box
  • ½ lb. Shrimp without shells or tails, large, grilled
  • 2 corn kernels cut off & cobs discarded, grilled cobs
  • 1 cup grape tomato cut in half, or cherry tomato

The Dressing:

  • 1 cup basil leaves fresh, packed
  • 5 tablespoons extra-virgin olive oil
  • 2 tablespoons shallot minced
  • 2 tablespoons Greek yogurt nonfat plain
  • ½ teaspoon kosher salt
  • ½ teaspoon black pepper ground

Instructions

The Salad:

  1. Cut half of the avocado into chunks and the other half into thin slices.
  2. In a large bowl, combine the avocado chunks, cooked pasta, shrimp, corn kernels and tomatoes.

The Dressing:

  1. In the bowl of a food processor, combine the basil leaves, olive oil, shallots, Greek yogurt, salt and pepper. Puree until almost smooth.
  2. Pour the dressing over the salad and toss gently to combine. Season with salt and pepper, to taste.
  3. Lay the avocado slices on top of the pasta salad. Serve.
