Ingredients

  • 1 pound red potato quartered, small
  • 1 pound smoked sausage such as andouille or kielbasa, sliced into 1-inch pieces
  • 4 corn each cut into 3-4 pieces, ears
  • 1 pound Shrimp peeled and deveined, large
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning or your favorite seasoning blend
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper
  • ¼ cup parsley optional, for garnish, chopped, fresh
  • lemon optional, for serving, wedges

Instructions

  1. Preheat grill or oven: Preheat grill to medium-high heat or oven to 400°F (200°C).
  2. Prepare foil packets: Cut four large pieces of aluminum foil (about 12x18 inches each).
  3. Combine ingredients: In a large bowl, combine the quartered potatoes, sliced smoked sausage, corn pieces, and shrimp. Drizzle with olive oil and sprinkle with Cajun seasoning, paprika, garlic powder, and black pepper. Toss to coat everything evenly.
  4. Assemble foil packs: Divide the mixture evenly among the four pieces of foil. Place the ingredients in the center of each foil piece. Bring the two longer sides of the foil together and fold them over several times to seal. Fold up the two open ends of the foil to create a sealed packet.

Cook:

  1. Grill: Place the foil packets on the preheated grill and cook for 20-25 minutes, or until the potatoes are tender and the shrimp are cooked through.
  2. Oven: Place the foil packets on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the potatoes are tender and the shrimp are cooked through.
  3. Serve: Carefully open the foil packets (be mindful of hot steam) and garnish with chopped fresh parsley (if desired). Serve immediately with lemon wedges, if desired.

Notes

  • Shrimp: Use large shrimp for this recipe. You can also use other seafood, such as scallops or crawfish.
  • Potatoes: Small red potatoes are a good choice, but you can also use other types of potatoes, such as Yukon Gold or fingerling potatoes.
