Shrimp Fajitas

Shrimp Fajitas combine marinated jumbo shrimp with sautéed bell peppers and onions, seasoned with a blend of chili powder, cumin, garlic, and other spices. The shrimp cooks quickly and remains tender, while the sautéed vegetables add sweetness and texture. Served with tortillas and toppings like avocado, sour cream, and salsa, the dish offers a flavorful, hands-on meal with layered Mexican-inspired flavors.

Description

This Shrimp Fajitas recipe features jumbo peeled and deveined shrimp marinated with fajita seasoning composed of chili powder, cumin, garlic powder, paprika, oregano, salt, and pepper, plus olive oil and lime juice. This infuses the shrimp with a balanced mix of smoky, earthy, and fresh citrus flavors. The shrimp is set aside to absorb the spices while the vegetables cook.

Thinly sliced yellow onions and bell peppers are sautéed in olive oil until softened and lightly caramelized, adding sweetness and texture contrast. The shrimp cooks quickly in the same pan until pink and opaque. Combining the shrimp with the vegetables and a fresh squeeze of lime juice creates a harmonious filling.

The fajitas are served with warm tortillas and optional toppings such as sliced avocado or guacamole, sour cream, and salsa, allowing customization and balance of creaminess, acidity, and heat. This makes for a lively and flavorful meal that highlights the lightly spiced shrimp and tender bell peppers.

Instructions

  3. Sauté the onion and bell peppers. Heat the remaining two tablespoons of olive oil in a large skillet over medium heat. Add the onion and bell peppers, and sauté for 4 to 5 minutes, until softened and the onions have started to caramelize. Transfer to a plate.
  4. Sauté the shrimp. In the same skillet, add the shrimp and cook for 2 to 3 minutes on each side, until they turn pink and opaque.
  5. Combine the shrimp and fajita veggies. Add the bell peppers and onions back to the skillet, give everything a toss, and squeeze more lime juice on top. Serve immediately with tortillas and extra toppings such as sour cream, pico de gallo and guacamole.
