Shrimp Foil Packet
Description
The recipe starts by mixing peeled deveined shrimp with sliced courgette, chopped peppers, and cherry tomatoes in a marinade of olive oil, paprika, oregano, ground coriander, garlic puree, salt, and pepper. These are portioned onto sheets of heavy-duty aluminum foil, optionally adding butter for richness, and sealed into packets.
Cooking methods include grilling over a campfire, oven baking at 220ºC (425ºF), or air frying at 200ºC (400ºF). The shrimp are cooked until pink and vegetables are tender, usually 10-20 minutes depending on method. Turning packets during grilling ensures even cooking.
The result is a convenient, slightly smoky mixed dish with tender shrimp and vegetables integrated with aromatic seasonings. It is suitable as a quick seafood meal without added cleanup.
Notes suggest using heavy-duty foil to avoid tearing, cutting zucchini into thin half-moons for uniform and thorough cooking, and cautiously opening packets due to hot liquid inside. Omitting butter lowers the calorie and SmartPoints count.
Ingredients
For the Shrimp foil packets:
- 250 g Shrimp 250g), uncooked, deveined
- 2 zucchini (courgettes)
- 2 pepper deseeded and chopped
- 16 cherry tomato cut in half or left whole
- 1 ½ teaspoons butter optional
For the marinade:
- 1 ½ teaspoons paprika
- 1 ½ teaspoons oregano dried
- 1 teaspoon ground coriander
- 1 teaspoon Garlic puree
- salt
- black pepper
- 2 tablespoons olive oil
Instructions
Grilling And Campfire
- Light up the campfire or preheat the oven to fan assisted 200C / 220C / 425 F / gas 7.
- Add the shrimp, courgette (zucchini), peppers and cherry tomatoes into a bowl.
- Mix together the marinade ingredients and add to the shrimp mix and mix until combined.
- Split the shrimp mix across 4 sheets of aluminum foil and split the butter (if using) across the packet.
- Fold edges of foil up around the food to form a closed foiled packet.
- If grilling on a campfire or grill, then cook the shrimps foil packets for about 10 mins on one side, then turn over and cook for 5-6 mins on the other side or until the shrimps are pink and cooked through.
Oven
- Preheat the oven to fan assisted 200C / 220C / 425 F / gas 7.
- Place prepared foil packets on a rimmed baking tray.
- Cook for 15-20 minutes until the shrimps are pink and cooked through.
Make In The Air Fryer
- Preheat Air Fryer to 400F / 200C.
- Mix together the shrimp, zucchini(courgette), peppers, and grape tomatoes.
- Mix the marinade ingredients and coat the shrimp veggie mix.
- Split the shrimp mix across 4 sheets of aluminum foil packs.Fold edges of foil up around the food into a closed foiled packet.
- Cook in batches in the Air Fryer basket for 15 minutes or until shrimp is cooked through (or you may be able to fit it all in an air fryer oven).
In The Instant Pot
- Mix together the shrimp, zucchini (courgette), peppers, and grape tomatoes.
- Mix the marinade ingredients and coat the shrimp veggie mix.
- Split the shrimp mix across 4 sheets of aluminium foil packs. Fold edges of foil up around the food into a closed foiled packet.
- Put the Instant Pot Air Fryer Basket into the Instant pot and add in the foil packs one at a time.
- Lock the Air Fryer Lid, Select air fryer function, set to 400F / 200C for 18 minutes, and press start.
- Cook until about 15 minutes and check. If not done, then cook for a further few minutes.
Notes
- Use heavy-duty foil to prevent tearing when grilling or cooking the packets.
- Cut zucchini into thin half-moons to ensure they cook through within the cooking time.
- If using larger vegetable cuts, precook them for 5 minutes before adding shrimp to the foil packets.
- Open foil packets carefully as hot liquid will be released after cooking.
- Omitting the optional butter reduces the recipe to 2 Blue Plan SmartPoints per serving.
