  • 1 pound linguine noodles , white or wheat
  • 4 Tablespoons butter unsalted
  • 3 Tablespoons olive oil
  • 5 cloves garlic , minced
  • 1 pound Shrimp about 20 shrimp, peeled and deveined, large
  • salt to taste, freshly ground
  • black pepper to taste, freshly ground
  • 1/2 cup parsley chopped, fresh chopped
  • lemon from 1/2 of a large lemon, zest
  • 1/4 cup lemon juice about 2 lemons, fresh
  • 1/2 lemon , thinly sliced in half-rounds
  • red pepper flakes to taste, crushed
  • 1/2 cup Parmesan Cheese freshly grated

Instructions

  1. Bring a large pot of water to boil. Add a little bit of oil and salt to the boiling water and cook the linguine according to package instructions.
  2. Meanwhile, season the shrimp with salt and pepper and set aside.
  3. Add the butter and olive oil to an extra-large skillet over medium-low. Once the butter has melted, add the garlic and sauté for 1 minute, being careful not to burn it. 
  4. Add the shrimp and sauté just until they turn pink, about 4-5 minutes, tossing often.
  5. Remove from the heat and add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. 
  6. Toss to combine. Season with additional salt and pepper, if needed.
  7. When the pasta is cooked, drain the water and add the noodles to the sauté pan. 
  8. Top with fresh parmesan cheese and toss everything gently to combine. Serve.

Notes

  • For extra flavor, add 1/4 cup white wine during the garlic sauté and let it reduce slightly before adding shrimp.
  • Incorporate vegetables like asparagus and cherry tomatoes toward the end of cooking for added texture and color.
  • Substitute linguine with zucchini noodles for a lower-carb alternative.
