  • ½ pound andouille sausage
  • 1 pound Shrimp peeled and de-veined, medium
  • 1 zucchini sliced, medium
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • cup olive oil
  • 1 packet herb marinade GrillMates Zesty Herb brand
  • 2 tablespoons water
  • lemon juice of ½ lemon
  • parsley chopped, for garnish

Instructions

  1. In a large bowl combine oil, marinade, water, and lemon juice and stir to combine. Add sausage, shrimp, and veggies to the bowl and stir to combine.
  2. Divide shrimp and sausage mixture between four pieces of 12x12 inch foil. Warp tightly, pinching edges to seal packet. 
  3. Grill over medium-high heat for 5-10 minutes on each side until veggies are tender. Garnish with chopped parsley and fresh lemon juice if desired and serve. 

Notes

  • Prepare the foil packs in advance and store them in the refrigerator or cooler until ready to grill.
  • Grill the packets over medium-high heat for 5-10 minutes on each side until vegetables are tender and shrimp is cooked through.
