Shrimp Scampi
Description
This Shrimp Scampi recipe starts by searing shrimp seasoned with salt and pepper in olive oil and butter, forming a delicate outer texture while keeping the interior tender. Garlic is added briefly to infuse its pungency without bitterness. White wine reduces to concentrate the flavors and deglaze the pan, contributing acidity and aroma.
Finishing with additional butter, lemon juice, and zest creates a silky sauce that balances richness with citrus brightness. The optional red pepper flakes can provide a gentle warmth without overpowering the other elements. Fresh parsley added off the heat lends a herbaceous freshness that complements the seafood.
Serve over pasta, rice, zoodles, or spaghetti squash to catch the buttery, garlicky sauce, making this a versatile seafood dish suitable for a light but flavorful meal.
The notes advise using peeled and deveined shrimp for ease and ensuring not to overcook the shrimp to avoid a rubbery texture. Dry white wines like Pinot Grigio or Sauvignon Blanc are recommended for best flavor. For a non-alcoholic option, chicken stock can replace the wine. Freshly squeezed lemon juice is preferred for its bright acidity.
Ingredients
- 2 Tablespoon olive oil
- 4 Tablespoon butter divided (2 tbsp & 2 tbsp)
- 1 lb Shrimp peeled and deveined with tail on or off
- salt to taste
- black pepper to taste
- 4 garlic minced, large cloves
- ¼ cup white wine i.e. Pinot Grigio, dry
- 2 Tablespoon lemon juice
- lemon zest zest of 1 lemon
- ½ teaspoon red pepper flakes to taste (optional)
- ¼ cup parsley optional, chopped, fresh
Instructions
- Heat olive oil and 2 Tbsp butter in a large skillet over medium high heat.
- Season shrimp with salt and pepper. Add shrimp to the hot skillet and sear for about 1 minutes on each side.
- Before the shrimp is cooked through, add the minced garlic and saute for about 30 seconds. Add the white wine and cook for about 1-2 minutes until it is reduced by about half. In the meantime, turn the shrimp and cook on the other side.
- Add the remaining butter, lemon juice and zest. Take the skillet off the heat and add the chopped fresh parsley. Serve over rice, pasta, zoodles, or spaghetti squash.
Notes
- Use peeled and deveined shrimp for easier preparation and uniform cooking.
- Avoid overcooking the shrimp; cook just until opaque for a tender texture.
- Choose dry white wines such as Pinot Grigio or Sauvignon Blanc to complement the flavors.
- Chicken stock can substitute for white wine if avoiding alcohol.
- Freshly squeezed lemon juice improves flavor over bottled varieties.
