Description

The recipe begins by boiling pasta in salted water until al dente. Meanwhile, garlic is gently sautéed in butter and olive oil to release its aroma without burning. They sear for a couple of minutes on each side until just turning pink, preserving their tender texture.

White wine or chicken broth is poured into the pan alongside a pinch of red pepper flakes, and the mixture simmers briefly to develop the sauce while reducing. Off the heat, fresh lemon juice, lemon zest, thin lemon slices, and chopped parsley are added to brighten the flavors. The drained pasta is then tossed in the sauce with the shrimp, combining all elements.

  • 4 pasta amount as servings, type of your choice
  • 2 tbsp olive oil 30 mL
  • 4 tablespoons butter
  • 4-5 garlic minced, large cloves
  • 2 lbs Shrimp peeled and de-veined. tails optional, 20 count
  • salt to taste, freshly ground
  • black pepper to taste, freshly ground
  • 1/4 cup dry white wine 59 mL or chicken broth
  • 1/4 teaspoon red pepper flakes crushed
  • lemon zest of 1
  • lemon juice of 2
  • 1/2 lemon sliced thinly
  • 1/4 cup parsley optional, chopped

Instructions

  1. Bring a large pot of water to boil, add 1 tablespoon of salt and the pasta to the pot, and cook for 7 to 10 minutes, or according to the directions on the package.
  2. While pasta is cooking, heat olive oil and butter in a large saute pan or skillet over medium heat. Add garlic and cook until fragrant, stirring frequently for about 30 seconds to 1 minute.
  3. Add the shrimp, season them with black pepper and salt to taste, no more than about 1 tsp each, and let sear for 2 minutes on one side, until it's just turning pink, then flip onto their other sides.
  4. Pour in wine or broth, add red pepper flakes, and bring to a simmer for 2-3 minutes, stirring often; the wine will be reduced and the shrimp cooked through by 3 minutes, don't overcook the shrimp.
  5. Take off heat and stir in the lemon slices, lemon zest, lemon juice and parsley. Taste sauce for seasoning, then toss the drained pasta with shrimp and sauce, then serve immediately.
