Shrimp Scampi Zoodles

Shrimp Scampi Zoodles feature cooked shrimp and cherry tomatoes tossed with zucchini noodles in a garlicky, slightly spicy sauce made with olive oil, onion, garlic, lemon juice, chicken broth, and Sriracha. Parmesan cheese tops the dish, adding a savory finish to the fresh and light vegetable noodles.

Description

The zucchini noodles provide a tender, low-carb alternative to pasta, absorbing the bright, garlicky flavors from the sauce. Cooking the onion and garlic until soft allows their flavors to meld before adding the shrimp and tomatoes, which warm briefly to avoid overcooking the shrimp.

The addition of lemon juice and chicken broth adds brightness and moisture to the dish, while the Sriracha introduces a mild heat. Parmesan cheese sprinkled on top offers a salty, creamy contrast.

This dish is served warm, making it a light, flavorful meal option. The shrimp are already cooked before adding, so they are heated gently to maintain their texture.
