Silver Dollar Pancakes
Description
Silver Dollar Pancakes combine all-purpose flour, sugar, baking powder, and salt into a dry mix with milk, egg, melted butter, and vanilla stirred in to form a smooth batter. The pancakes are cooked in a lightly buttered pan over medium-low heat. The small batter portions result in pancakes about 2-3 inches wide, with golden bottoms and gently set tops before flipping. Cooking the pancakes on moderate heat ensures the centers cook through without burning the exterior.
The flavor of these pancakes is mildly sweet with vanilla notes and a tender yet slightly fluffy texture from the baking powder leavening. They hold their shape well thanks to the balanced wet and dry ingredients, offering a classic, light breakfast pancake suitable for small, manageable bites.
Serving is traditional with butter, maple syrup, and fresh berries to add richness, sweetness, and freshness. The size makes them ideal for children or for plating multiple pancakes without overwhelming portions. These pancakes can be cooked in batches, keeping warm on a plate before serving immediately.
Ingredients
- 2 cups all-purpose flour 250 grams
- 3 tablespoons granulated sugar 40 grams
- 1 tablespoon baking powder 12 grams
- 1 teaspoon salt
- 1 1/2 cups milk 355 milliliters
- 1 egg large
- 4 tablespoons unsalted butter melted and slightly cooled, plus more for greasing, 60 grams
- 1 teaspoon vanilla extract
For serving:
- butter
- maple syrup
- fresh berries
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Make a well in the center of the flour mixture. Pour in the milk and egg, then whisk just until combined. Mix in the melted butter and vanilla extract just until blended with no lumps.
- Place a large pan over medium-low heat. Grease lightly with butter. Drop 1 tablespoon round dollops in the pan, taking care not to overcrowd.
- Cook until the bottom is just golden and the top is starting to set. Flip carefully and cook the other side just until golden and cooked through. Remove to a plate and repeat with remaining batter, greasing the pan as needed between pancakes.
- Serve immediately if desired with butter, maple syrup, and fresh berries.
