Simple 15-Minute Vegan French Toast with Berry Compote

This vegan French toast uses a batter of oat milk, chickpea flour, nutritional yeast, and spices to soak thick slices of crusty, day-old bread. It fries to a golden brown, offering a dairy-free alternative with hearty texture and warming flavors. Served with pure maple syrup and an optional simmered berry compote, it balances sweet and tart notes. The quick preparation suits a wholesome, plant-based breakfast or brunch.

Description

The batter blends oat milk and maple syrup with chickpea flour and nutritional yeast, which helps mimic the protein and texture of eggs. Cinnamon, nutmeg, and salt add warmth and depth. Thick slices of day-old bread, ideally ciabatta or sourdough, are soaked briefly in the batter to absorb moisture without becoming soggy.

The bread is cooked in a lightly oiled skillet over medium-low heat until golden on both sides. This creates a crispy exterior with a soft interior. The French toast is served traditionally with maple syrup but can be topped with vegan whipped cream or a simple berry compote.

The berry compote is made by gently simmering mixed berries with cane sugar and orange juice until thick and jammy, providing a fresh and vibrant complement. Quick drying of fresh bread in the oven can substitute for day-old bread if needed.
