Ingredients

  • 1 cup corn kernels fresh or canned
  • 1/4 cup red onion finely chopped
  • 1/4 cup red bell pepper diced
  • 1 jalapeño seeded and finely diced, small
  • 2 tablespoons cilantro chopped, fresh
  • 1 tablespoon lime juice
  • 1 tablespoon olive oil extra virgin
  • 1 chipotle pepper in adobo sauce finely chopped
  • 1/4 teaspoon cumin ground
  • salt to taste
  • black pepper to taste

Instructions

  1. In a small mixing bowl, whisk together the lime juice, olive oil, chipotle pepper, cumin, salt, and pepper.
  2. In a seperate mixing bowl, combine the sweet corn, red onion, red bell pepper, jalapeño, and cilantro.
  3. Pour the dressing over the corn mixture and toss gently until well combined.
  4. Adjust seasoning according to taste preference, adding more salt, pepper, or lime juice if desired.
  5. Cover the salsa and refrigerate for a minimum of 30 minutes to allow the flavors to infuse together.
  6. Serve chilled as a topping for tacos, grilled meats, salads, or as a dip with tortilla or pita chips.

Notes

  • I like to use fresh corn, but you can also use thawed frozen corn or drained canned corn to make this simple recipe.
  •  I've found that it's best to allow the salsa a little time to chill before you serve it so that the flavors mix well together. So, give it at least 30 minutes before serving.
