Simple Cilantro Honey Lime Vinaigrette Recipe
Description
The Simple Cilantro Honey Lime Vinaigrette Recipe blends lime juice and zest with honey for sweetness, balanced by cumin's warm earthiness and fresh garlic's bite. Avocado oil forms the base, providing a neutral but rich mouthfeel, while chopped cilantro adds fresh herbal accents. The ingredients are combined and shaken or blended to emulsify, resulting in a dressing with a smooth texture that brightens salads or complements grilled foods.
The balance of sweet honey and tangy lime juice, lifted by garlic and cumin, makes this vinaigrette versatile enough to serve not only on leafy greens but also as a marinade for meats or a fresh sauce for roasted vegetables. The fresh cilantro offers a distinctive herbal note that permeates the dressing.
This dressing can be stored in an airtight container in the refrigerator for about one to two weeks and benefits from resting to allow flavors to meld. Bring it to room temperature before serving to soften the avocado oil if chilled.
Ingredients
- 1 lime zested
- ¼ cup lime juice about 2-3 limes, fresh
- 1-2 tablespoons honey omit if low carb, replace with sugar free honey or similar
- ½ teaspoon cumin
- 1-2 cloves garlic minced or pressed
- ½ teaspoon kosher salt
- ¼ cup avocado oil or your favorite oil, any vegetable oil or even extra virgin olive oil*
- ¼ cup cilantro chopped, optional
- black pepper freshly ground
Instructions
- In a jar, combine all dressing ingredients, cover and shake to combine, or whir for a second in a blender, food processor or with immersion blender. *Note, if using olive oil for the dressing, remember to remove it from the fridge about 30 minutes before using; the olive oil will harden.
- Then, add the dressing to an airtight container and store it in the refrigerator until ready to serve, preferably at least 30 minutes for best results! Allow the dressing to come to room temperature (about 20-30 minutes) before serving on your favorite salads.
Notes
- Store the dressing in an airtight container in the refrigerator for 7-14 days.
- You can omit honey and substitute with keto-friendly sweeteners like monk fruit for a low-carb version.
- Add jalapeño for a spicy variation or Greek yogurt for a creamy texture.
- The dressing works well as a marinade for proteins or a glaze on grilled vegetables and fruit.
- Allow refrigerated olive oil dressings to warm to room temperature before serving to avoid hardness.
