Description
The process begins by washing fresh cranberries and placing them in a pot with sugar, orange juice, and water. The mixture is brought to a boil and then simmered for about ten minutes until the cranberries burst and the mixture thickens. The jam’s sweetness can be adjusted by adding more sugar to taste. If the jam is too firm, covering the pot and cooking a few more minutes softens the texture.
The final cranberry jam has a bright, tart flavor characteristic of fresh cranberries, complemented by subtle citrus notes from the orange juice and tempered sweetness. Its simple ingredient list highlights the fruit’s natural qualities without added pectin or preservatives.
The jam can be cooled and transferred to sterilized jars for storage, suitable to use on toast, in desserts, or as an accompaniment to savory dishes. The short cooking time preserves much of the cranberry’s fresh flavor and color.
Ingredients
- 8 oz cranberries fresh
- 3 tbsp sugar
- 1 tbsp orange juice
- 2 fl oz water
Instructions
- Wash the cranberries under cold running water.
- Put them in a pot, add sugar, orange juice and water.
- Bring to a boil, then simmer for 10 minutes. Make sure all the fresh cranberries have 'popped.'
- Taste and add more sugar if needed.
- If the texture of the jam feels undercooked (too firm), then place the lid on the pot and cook for a further 2-3 minutes or until the texture is to your liking.
- Cool and transfer to a Bail jar or similar jar for storage.
