Simple Cucumber Salad
Description
Simple Cucumber Salad combines English and Persian cucumbers thinly sliced along with red onion pieces, peas, fresh dill, and cherry tomatoes, dressed with a balsamic vinegar reduction and extra virgin olive oil. The cucumbers provide a crisp and mild base with little bitterness due to their thin skins and sparse seeds. The sharpness from the red onion and acidity from the vinegar complement the mild sweetness of the peas and tomatoes, creating a balanced flavor. This salad can be tossed to blend the dressing evenly or served arranged on a platter.
The salad's texture is predominantly crisp and delicate due to the choice of cucumbers and fresh ingredients. The dressing is simply whisked together with kosher salt and black pepper to enhance the flavors without overpowering them. This recipe requires no cooking and comes together quickly, making it suitable for warm days or quick side accompaniments.
The salad is suitable alongside grilled meats or as part of a picnic meal. It can be customized easily by peeling cucumbers if preferred, although the recipe notes they do not require peeling.
Ingredients
- 2 long cucumber thinly sliced, English
- 2-3 mini or cucumber thinly sliced, Persian
- 1/2 medium red onion thinly sliced into about 1" long pieces
- 1 cup peas thawed, frozen
- 1 or 2 Tbsp dill minced, fresh
- 1 cup cherry tomato halved or quartered if they're really large
- 1/3 cup balsamic vinegar Alessi is a brand we like, reduction
- 1/3 cup extra virgin olive oil
- 3/4 tsp kosher salt
- 1/2 tsp black pepper
Instructions
- Add cucumbers, red onion, peas, dill and tomatoes to a large mixing bowl. Alternately, arrange them on a platter, as I've done in the photos.
- In a small bowl or mason jar, add balsamic vinegar reduction, olive oil, salt and pepper and whisk vigorously to combine.
- Drizzle dressing over the salad and toss to combine, or just drizzle and serve.
Notes
- English and Persian cucumbers have thin skins and few seeds, so peeling is optional based on personal preference.
- Arrange the salad on a platter before dressing for a more decorative presentation if desired.
