Simple Curry Roasted Broccoli features trimmed broccoli florets and cashews tossed with canola oil and roasted initially to develop a tender yet slightly crisp texture and toasted cashew flavor. The broccoli doesn't dry out during roasting, as it is not completely dried before baking.
A quick curry glaze, consisting of curry paste, sugar, salt, and water, is mixed and added to the vegetable-cashew mix after the first roast. Returning the broccoli to the oven allows the glaze to absorb into the florets over an additional 5 to 10 minutes. This layering of roasting and glazing adds depth and a slightly sticky coating carrying warm curry spice.

Ingredients
- 1 pound broccoli trimmed and separated into florets
- ½ cup cashew
- 1 Tablespoon canola oil
- 1 Tablespoon of water
- 1 teaspoon curry paste of choice
- 1 teaspoon sugar
- ½ teaspoon salt
Instructions
- Preheat oven to 400F.
- Rinse the broccoli and shake off excess water, but don't dry too thoroughly. Toss the broccoli and cashews with oil, place on a baking sheet, and roast for 20 minutes, stirring once or twice.
- Meanwhile, in a small bowl or jar, stir together water, curry paste, sugar and salt. Remove broccoli from oven and toss with curry glaze.
- Return broccoli to oven for 5-10 minutes, until glaze is absorbed.
