Simple Keto Italian Grinder Salad Recipe

Low carb salad inspired by the classic grinder sandwich. This salad is filled deli meats, cheese, onion and tomatoes tossed with a creamy tangy salad dressing.

Creamy Grinder Salad Dressing

  • 1/2 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian Seasoning Mix
  • ¼ teaspoon red pepper flakes or tsp Sriracha
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper ground
  • salt freshly cracked
  • black pepper freshly cracked

Grinder Salad

  • 1/2 iceberg lettuce shredded or chopped, head
  • ¼ cup red onion diced
  • 4 ounces mozzarella cheese pearl size or diced
  • 1 cup cherry tomato sliced
  • ¼ cup Pepperoncini sliced
  • 4 ounces salami chopped
  • 4 ounces ham sandwich deli meat chopped
  • 4 ounces turkey sandwich deli meat chopped

Instructions

Grinder Salad Dressing

  1. Place mayonnaise, red wine vinegar, garlic powder, Italian seasoning, red pepper flakes, salt and pepper in a mason jar or small mixing bowl.
  2. Whisk until all ingredients are smooth and creamy.

Grinder Salad

  1. Chop or shred lettuce, onion, salami, ham, and turkey. Place ingredients in a large mixing bowl with the remaining ingredients; mozzarella, cherry tomatoes, and pepperoncini.
  2. Add about half of the dressing to the salad mix, then gently toss the salad. Add additional dressing if desired.

Notes

  • Meat options: roast beef, or a combination of Italian cold cuts (like capicola, mortadella, and pepperoni). Cheese options: Provolone, mozzarella, Swiss, parmesan cheeseAdditional vegetables: cucumbers, pickles or banana peppers. Lighten up dressing: replace half of the mayonnaise with low or non-fat Greek yogurt.
