This salad uses thin slices of English cucumbers, crisp radishes, and mild shallots mixed with freshly chopped dill herb. The salad is best served immediately to maintain the cucumbers' crunch, but if delayed, draining excess water from cucumbers with salt and patting dry helps keep it from becoming soggy. It pairs well with Mediterranean or grilled dishes and can be varied by substituting fresh herbs like mint or parsley.
Adjusting the dill quantity or adding extras such as olives or feta cheese can suit personal taste preferences. Preparing components ahead and assembling just before serving helps preserve freshness.
Ingredients
- 2 cucumber thinly sliced using mandoline or knife (see notes, English
- 1 to 2 shallot thinly sliced
- 4 to 6 radish thinly sliced
- dill chopped fresh, about 1/4 oz/9 g
For Dressing
- 3 to 4 tbsp extra virgin olive oil I used Early Harvest Greek extra virgin olive oil
- 2 tbsp white wine vinegar
- lemon juice of half
- 1 tsp oregano dried
- salt
- black pepper
Instructions
- Place sliced cucumbers in a large mixing bowl. Add sliced shallots, radish, and fresh dill.
- In a small bowl (or mason jar), combine the dressing ingredients (extra virgin olive oil, white wine vinegar, lemon juice, oregano, kosher salt and black pepper.) Whisk (or cover and shake the mason jar) until well combined.
- Pour the dressing over the salad. Toss again to combine, making sure the cucumber salad is well coated with the dressing. Enjoy!
Notes
- If not serving right away, drain cucumbers with salt for 20 minutes and pat dry to keep salad crisp.
- Prepare ingredients ahead, but toss the salad just before serving for best texture.
- Dry dill weed can replace fresh dill; start with less and adjust to taste.
- Variations include adding fresh mint, parsley, kalamata olives, or feta for added flavor.
