Simple Skillet Green Beans
Description
Simple Skillet Green Beans are prepared by heating olive oil in a skillet over medium-high heat with crushed red pepper flakes to infuse some gentle heat. Fresh green beans are added and tossed to coat them in the oil. Covered and cooked on medium heat, the beans soften and blister without losing their slight snap. Adding minced garlic after simmering allows the garlic to lightly saute without burning and imparts a fresh pungency. Finishing with lemon zest and juice adds brightness and acidity, counterbalancing the oil and pepper flakes.
These green beans make a bright, slightly spicy vegetable side that complements a variety of main courses. They can be served warm immediately to retain their snap and fresh flavors.
Ingredients
- 1 tablespoon extra-virgin olive oil
- 1/8 teaspoon red pepper flakes crushed
- 1 pound green beans ends trimmed, fresh
- 3 garlic minced, cloves
- 1 teaspoon lemon zest, grated
- 1 tablespoon lemon juice fresh
- salt to taste, kosher salt and freshly ground
- black pepper to taste, kosher salt and freshly ground
Instructions
- In a large skillet with a fitted lid, heat the olive oil over medium-high heat. Add the pepper flakes and green beans and toss with tongs or a spoon until the green beans are coated with the olive oil. Cover the pan and reduce the heat to medium. Cook for 7 minutes, stirring every minute or two so the green beans don’t burn. You want them to be blistered and tender, but still have a little “snap.”
- Remove the lid and add the garlic, stirring to coat the green beans. Add the lemon zest and juice, toss, season with salt and pepper to taste, toss again, and serve immediately.
