Simple Skillet Pork Chops with Caramelized Onions Bacon

Cast iron skillet pork chops with caramelized onion and topped with bacon in a creamy sauce. Great simple family meal that is on the table in 30 minutes!

Ingredients
- 4 3/4 - 1 inch boneless pork chops
- 4 slices Bacon diced
- 1 tablespoon butter
- 1 large onion sliced
- salt and pepper to taste
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 1 teaspoon arrowroot and 1 tablespoon water

Instructions
- In a large skillet cook bacon over medium-high heat until crispy. Remove bacon and set aside.
- Add butter to bacon grease. Add sliced onions and season with a pinch of salt. Reduce heat to medium and stir onion until it is lightly browned and caramelized (10-15 minutes). Remove from skillet and set aside.
- Season pork chops with salt and pepper on both sides. Return heat to medium-high and add pork to skillet and cook each side 2-3 minutes
- In a small bowl whisk together arrowroot and water.
- Whisk in chicken broth and cream. Add to skillet with pork and scrape up and browned pieces stuck to the bottom of the skillet.
- Top pork with onion and bacon. Reduce heat to low and cook for 15-20 minutes uncovered or until the internal temperature reaches 145°F.
