  • 4 3/4 - 1 inch pork chops boneless
  • 4 lices Bacon diced
  • 1 tablespoon butter
  • 1 onion sliced, large
  • salt to taste
  • black pepper to taste
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 teaspoon arrowroot with 1 tablespoon water

Instructions

  1. In a large skillet cook bacon over medium-high heat until crispy. Remove bacon and set aside.
  2. Add butter to bacon grease. Add sliced onions and season with a pinch of salt. Reduce heat to medium and stir onion until it is lightly browned and caramelized (10-15 minutes). Remove from skillet and set aside.
  3. Season pork chops with salt and pepper on both sides. Return heat to medium-high and add pork to skillet and cook each side 2-3 minutes
  4. In a small bowl whisk together arrowroot and water.
  5. Whisk in chicken broth and cream. Add to skillet with pork and scrape up and browned pieces stuck to the bottom of the skillet.
  6. Top pork with onion and bacon. Reduce heat to low and cook for 15-20 minutes uncovered or until the internal temperature reaches 145°F.
