Single-Serve Peach Cobbler

This easy peach cobbler recipe is the perfect sized treat for one or two individuals! Ideal for the times you don't want leftovers tempting you from the kitchen!

Ingredients
Cobbler Topping:
- ¼ cup gluten-free all-purpose flour
- 1 Tbsp coconut oil melted or 1.5 Tbsp melted butter
- 1 Tbsp pure maple syrup
- ¼ tsp pure vanilla extract optional
- Pinch sea salt
Peach Filling:
- 1 cup fresh peaches sliced or chopped*
- 2-3 tsp pure maple syrup to taste
- 1 Tbsp coconut oil melted or melted butter
- ½ tsp gluten-free all-purpose flour**
- Pinch sea salt

Instructions
- Preheat the oven to 350 degrees F.
- Toss together the ingredients for the peach filling to a measuring cup or small bowl and toss together until well-combined. Transfer the peach mixture to an oven-safe ramekin.
- Melt butter or coconut oil in a small measuring cup (or a small bowl) for 20-40 seconds in the microwave. Add the remaining ingredients for the cobbler topping to the measuring cup. Mix well until a thick dough forms. Set aside until ready to use.
- Place the flour mixture on top of the peaches. I form a crumble topping out of the dough, but you can also create an even layer or a biscuit shape out of the cobbler dough.
- Place the ramekin of peach cobbler on a baking sheet. This is a preventative measure to catch any juices that may seep out so that they don’t spill onto your oven floor. I haven’t gotten any seepage, but I still think it is the best way to prevent any unnecessary cleanup.
- Bake on the center rack of the preheated oven for 25-30 minutes, or until the topping is golden brown and the peaches have softened. The baking time may vary depending on whether your ingredients are at room temperature or if they are chilled.
- Remove the cobbler from the oven and allow it to cool for at least 10 minutes, or until the ramekin is cool enough to handle.
- Enjoy this single-serve peach cobbler with a small scoop of vanilla ice cream, and enjoy!
