A flourless, single serving protein cookie to curb cravings. Soft and comforting with a peanut butter chocolate chip flavor, this protein cookie is a great one to whip up on nights you need a treat!

Ingredients
- ¼ cup vegan vanilla protein powder I used Botanica Perfect protein
- 1 tablespoon peanut butter
- ¼ cup egg whites
- 1 tablespoon chocolate chips
- ½ teaspoon baking powder
- 1.5 tablespoons honey
- ½ teaspoon vanilla extract

Instructions
- Preheat the oven to 350F.
- Mix together all wet ingredients until smooth.
- Add in the remaining ingredients.
- Mix until everything is combined, it will be thick.
- Use a silicone spatula to portion the batter out onto a lined cookie sheet. You’ll need to shape it manually.
- Bake for 8-9 minutes and remove it from the oven even though it doesn’t look done.
- Let cool for 10-15 minutes on the pan.

- Less is more when it comes to this single serve cookie. It won’t look done when you take it out of the oven, but it will continue to cook. So, if in doubt, cook it for less time.
- Ideally you let it cool for a solid 15-20 minutes. However, I have totally stood at the counter and eaten it out of the oven.
- Vegan protein powder works best but not fermented protein powder as that will absorb too much liquid and give the cookie a chalky taste. Even a pea-based vegan protein powder will absorb more liquid so you may need to add 1-2 tbs of dairy-free milk (you'll know if the batter is super thick and hard to spread).
- Use fresh peanut butter and let it come to room temperature first. This makes it easier to mix into the batter. Hard nut butter at the bottom of the jar doesn’t work.
