Skillet Chili Lime Corn

Skillet Chili Lime Corn features frozen corn sautéed with melted butter and diced jalapeño, sweetened with honey and spiced with cayenne pepper and salt. Lime juice brightens the dish, which is finished with chopped cilantro and crumbled queso fresco. The corn caramelizes slightly for textured sweetness paired with spicy, tangy, and fresh notes.

Description

This recipe sautés frozen corn in a skillet with melted butter and finely diced jalapeño, allowing the corn to cook through and develop slight caramelization. The addition of honey balances the heat from the jalapeño and cayenne pepper, while salt enhances the natural sweetness. Lime juice is stirred in at the end to add a sharp, citrus brightness that lifts the flavors.

The dish is garnished with fresh cilantro and crumbled queso fresco, which provides a mild, crumbly contrast to the sweet and spicy corn mixture. This preparation offers a flavorful side dish that complements grilled meats or can be served as a snack with layers of heat, sweetness, and acidity.

Alternatives to queso fresco include Cotija or any mild crumbled cheese to suit preference.
