Description
This Skillet Fajitas recipe starts with boneless, skinless chicken breasts sliced into strips and seasoned with taco seasoning. The chicken is cooked in canola oil in a skillet until browned and fully cooked, ensuring a tender, juicy interior. Separately, bell peppers and onions are sautéed until they become tender but still retain some crunch, maintaining varied texture in the dish.
Once vegetables are ready, the chicken is returned to the skillet, and fresh lime juice is squeezed over to brighten the flavors. The fajita mixture is then served with small flour tortillas, ideal for wrapping the meat and vegetables. This straightforward skillet method efficiently cooks ingredients in stages for balanced textures and well-developed flavors.
Leftover fajita filling can be refrigerated for a few days and enjoyed again with preferred toppings like shredded cheese, salsa, pico de gallo, or sour cream for added layers of taste.
Ingredients
- 3 chicken breast large (cut into strips, skinless, boneless
- 3 bell pepper julienned (any colors will work
- 1 yellow onion peeled and cut into strips, large
- 2 Tablespoons canola oil
- 2 Tablespoons taco seasoning
- 1 lime juiced
- 12 flour tortillas small
Instructions
- Add chicken to a large bowl and add the seasoning on top, stirring to mix.
- Pour canola oil into the cast iron skillet and begin to heat on medium heat.
- Add the seasoned chicken to begin to cook. Continue to cook the chicken until it turns brown and chicken is cooked through (5-7 minutes per side). I like to cut into a piece of chicken and make sure it is no longer pink on the inside.
- Remove the chicken from the pan to a separate plate and set aside.
- Add the pepper and onions to the skillet. Stir to blend all together.
- Continue to cook until the peppers are tender (2-4 minutes) but not limp, stirring occasionally so that they don’t burn.
- When the veggies are done, add the chicken back to the pan! Squeeze fresh lime juice over the top before serving and enjoy!
Notes
- Store leftover fajita mixture in an airtight container in the refrigerator for up to 5 days.
- Customize your fajitas with toppings such as shredded cheese, salsa, pico de gallo, and sour cream to add flavor and texture.
